Although squid or calamari is found in India, I cannot recall having any seafood preparation that involved a calamari. However in my current home, Singapore, the sotong is very popular and always readily available. So when I found some fresh squid and was wondering what I could cook with me…I had an eureka moment.
I still had some of my favourite green chutney and decided to adapt my mom’s stuffed pomfret recipe. So I cleaned the squid and stuffed it with some green chutney and fresh tomatoes and lightly fried it in some oil infused with green chillies. Simple flavours yet so tasty.
Definitely a recipe to keep and develop further…
