This is a recipe for Parsi Ravo or Rawa as we called it at home, and mom got it ages ago from her friend.

It is a semolina pudding and has got to be one of the simplest desserts to make, and also extremely delicious and satisfying. So simple that it was one of mom’s go-to desserts for many meals.

Ingredients:

45g semolina
45g ghee
120g sugar
1/2 litre whole milk
1 tsp vanilla essence
Pinch of nutmeg
Slivered almonds & raisins

Method:

Heat the ghee in a thick – bottomed pan and roast the semolina for 2-3min. Don’t let it turn brown.
Heat the milk & sugar gently in a saucepan till the sugar has dissolved. Add the milk to the semolina & return to the heat. Add a pinch of nutmeg.
On a low heat stir and continue to cook till the mixture starts to thicken.
Remove from heat and cool slightly. Add the vanilla essence, stir and pour into the serving bowl. Keep it to chill. It will thicken as it cools to the consistency of thick cream.
Decorate the top with almonds & raisins. You can fry them a little before decorating. And enjoy!

I’ve never tried any flavour variations for this but I’m sure you can add fruit and other flavours and adapt this recipe. Happy trying!
